# Directions:

01 - In a medium bowl, mix the cream cheese, 2 tbsp sugar, and vanilla extract until smooth. Gently fold in the diced strawberries.
02 - Flatten each slice of bread with a rolling pin to make it thin and pliable.
03 - Spread about 1 tablespoon of the cream cheese-strawberry mixture over each bread slice, leaving a small border. Roll up each bread slice tightly.
04 - Brush all sides of the roll ups lightly with melted butter. In a shallow bowl, mix together the sugar and cinnamon. Roll each buttered roll up in the cinnamon-sugar mixture until well coated.
05 - Heat a nonstick skillet over medium heat. Place roll ups seam-side down and cook, turning occasionally, until all sides are golden brown and crisp (about 6-8 minutes).
