01 - Preheat oven to 350°F. Grease a 12-cup muffin tin or line with silicone liners.
02 - Combine eggs, cottage cheese, Greek yogurt, salt, black pepper, and smoked paprika in a blender. Blend until the mixture is smooth and frothy.
03 - Divide turkey bacon, shredded cheese, chopped spinach, diced bell pepper, and diced onion evenly among muffin cups.
04 - Pour the blended egg mixture into each muffin cup, filling each about three-quarters full. Gently stir each cup with a fork to distribute fillings evenly.
05 - Bake for 18 to 20 minutes, or until the egg bites are set and lightly golden on top.
06 - Allow to cool for 5 minutes before removing from the muffin tin. Serve warm or refrigerate and enjoy cold.
