Creamy Crockpot Rotel Dip (Printable)

Slow-cooked melty cheese dip with zesty Rotel tomatoes and green chilies, perfect for gatherings.

# What You'll Need:

→ Dairy & Cheese

01 - 16 oz (about 1 lb) processed cheese such as Velveeta, cut into 1/2-inch cubes
02 - 4 oz cream cheese, cut into 1/2-inch cubes

→ Canned Goods

03 - 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

→ Meats (Optional)

04 - 1/2 lb ground beef or pork sausage (optional)

→ Spices & Seasonings

05 - 1/2 teaspoon garlic powder
06 - 1/4 teaspoon black pepper

# Directions:

01 - If using ground beef or sausage, heat a skillet over medium heat and cook the meat until fully browned, breaking it apart with a spoon. Drain off any excess fat and set aside.
02 - Add the cubed processed cheese, cubed cream cheese, and the entire can of Rotel diced tomatoes with green chilies (including the juices) into the slow cooker. If using the cooked meat, add it now as well.
03 - Sprinkle in the garlic powder and black pepper evenly over the top of the ingredients in the crockpot.
04 - Cover the crockpot and cook on the low setting for 2 hours, stirring every 30 minutes or so, until all the cheese has fully melted and the dip is smooth and creamy throughout.
05 - Leave the crockpot on the warm setting and serve the dip directly from it alongside tortilla chips, crackers, or fresh vegetable sticks.

# Expert Tips:

01 -
  • It practically makes itself while you focus on having fun with your guests.
  • The combination of processed cheese and cream cheese creates a velvety texture that store bought dips cannot match.
02 -
  • Resist the urge to cook this on high because the cheese can scorch on the bottom and leave you with a stubborn burnt layer that ruins the whole batch.
  • Stirring too often or too vigorously can make the dip grainy so a gentle fold every thirty minutes is plenty.
03 -
  • Cut the cheeses into uniform small cubes so everything melts at the same rate and you avoid waiting for that one stubborn lump to disappear.
  • If you are making this for a crowd, plug the crockpot in on a separate circuit from other appliances to avoid tripping a breaker mid party.
