01 - 4 slices bacon, diced
02 - 2 large eggs

05 - 3 cups cooked jasmine or long-grain rice, chilled

# Directions:

01 - Heat 1 tablespoon vegetable oil in a large skillet or wok over medium heat. Add diced bacon and cook until golden and crisp. Remove bacon with a slotted spoon and set aside, keeping rendered fat in the pan.
02 - Add thawed peas and carrots to the pan. Stir-fry for 2 minutes, stirring frequently, until vegetables begin to soften.
03 - Push vegetables to one side of the skillet. Add the remaining oil and crack in the eggs. Lightly scramble until just set, then mix with the vegetables.
04 - Add chilled cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry for 2 to 3 minutes until evenly heated.
05 - Pour soy sauce and oyster sauce over the contents. Return bacon to the skillet. Add ground black pepper and sliced green onions. Mix thoroughly and stir-fry another 2 minutes until piping hot.
